Zesty Tomato Basil Pasta Salad

Ingredients
  • 8 oz Box Organic Red Lentil Penne
  • 1/2 cup Vegenaise
  • Splash of non-dairy milk
  • Splash of White Vinegar
  • 1 tbsp adobe sauce from can of chipotles
  • 5 oz package of organic grape tomatoes
  • 1/2 package dairy-free cheese
  • 12 fresh basil leaves, sliced
  • Salt & Pepper to taste
Instructions
  1. Cook pasta per instructions on the box
  2. Slice basil thin & grape tomatoes into halves
  3. Mix Vegenaise, white vinegar, adobo sauce, and non-dairy milk
  4. Drain and rinse pasta with cold water to stop the cooking process
  5. Add pasta to mixture and top with basil, tomatoes & dairy-free cheese
