Green Lentil Penne & Greens

  • 2 x 250g boxes of Explore Cuisine Organic Green Lentil Penne

  • olive oil for frying

  • 2 large handful of kale or cavalo nero, roughly chopped

  • 1 small leek, sliced

  • zest and juice of 1 lemon

  • 100g feta, plant based or dairy

  • salt & pepper to taste

  • handful of microgreens


  1. Cook your pasta according to the package instructions
  2. Heat Olive Oil over medium heat
  3. Add the garlic and let sizzle for 30 seconds, then add the spinach and cook, around 5 minutes until wilted down.
  4. Using a highspeed blender, transfer the spinach and garlic and blend with ½ cup of pasta water until smooth.
  5. Add in the lemon juice, parmesan and salt and pepper and blend again.
  6. Combine the sauce with the cooked pasta and season to taste.
  7. Enjoy!
