Ingredients:
- 200g of Explore Cuisine Organic Black Bean spaghetti
- 400ml of tomato purée
- 120ml of water
- Half yellow onion, chopped
- 1tbsp of olive oil
- Salt & pepper as taste
- Pinch of sugar
- Fresh basi
- Grated parmesan cheese
Instructions:
- Heat the olive oil in a large pan or medium saucepan over medium heat
- Add the chopped onion, sauté for 5 minutes or until softened.
- Pour the tomato passata. Add some water in the empty bottle of tomato passata, swirl and pour the liquid back to the pan.
- Increase the heat to medium-high and bring to simmer. At this point, add salt and pepper, as taste. Add also a sprinkle of sugar to reduce the acidity of the sauce.
- Reduce the heat to medium-low, cover the sauce and allow to simmer for 30 minutes. Stir occasionally.
- When the sauce is nearly ready, bring a large pot of salted water to boil. Cook the pasta according to the package instructions until al dente.
- Drop the pasta into the pan and, and mix well.
- Pour the pasta in a serving dish, sprinkle some fresh grated parmesan cheese and finish with fresh basil leaves.
