Ingredients

2 x 250g boxes of Explore Cuisine Organic Green Lentil Penne

olive oil for frying

2 large handful of kale or cavalo nero, roughly chopped

1 small leek, sliced

zest and juice of 1 lemon

100g feta, plant based or dairy
-
salt & pepper to taste
-
handful of microgreens
Instructions
- Cook your pasta according to the package instructions
- Heat Olive Oil over medium heat
- Add the garlic and let sizzle for 30 seconds, then add the spinach and cook, around 5 minutes until wilted down.
- Using a highspeed blender, transfer the spinach and garlic and blend with ½ cup of pasta water until smooth.
- Add in the lemon juice, parmesan and salt and pepper and blend again.
- Combine the sauce with the cooked pasta and season to taste.
- Enjoy!
