Red Lentil Risoni with Figs

  • 1 Box Explore Cuisine Red Lentil Risoni (Cooked and rinsed, at room temperature)
  • 2 tbsp walnut oil 
  • tbsp lemon juice
  • small garlic clove, minced
  • 3 fresh figs, sliced
  • fresh mozzarella
  • walnuts, toasted and chopped
  • mint
  • salt and fresh ground black pepper
  1. Cook Risoni to instructions on box
  2. Mix walnut oil, lemon juice, and garlic then set aside to marinate for 5 minutes.
  3. Toss risoni with oil mixture.
  4. Season with salt and pepper. Gently fold in figs, mozzarella, walnuts, and mint. Finish with a few more grinds of pepper.

Note: substitute dried figs if fresh are not in season.
