Red Lentil Risoni with Figs

(Cooked and rinsed, at room temperature
small garlic clove, minced
fresh figs, sliced
walnuts, toasted and chopped
salt and fresh ground black pepper
Cook Risoni to instructions on box
Mix walnut oil, lemon juice, and garlic then set aside to marinate for 5 minutes.
Toss risoni with oil mixture.
Season with salt and pepper. Gently fold in figs, mozzarella, walnuts, and mint. Finish with a few more grinds of pepper.
Note: substitute dried figs if fresh are not in season.
