Pasta Salad Picnic Jars

Ingredients
  • 1 box Explore Cuisine Red Lentil Penne
  • 1 lemon
  • 1 tbsp honey
  • 1/4 cup olive oil
  • 1 cup marinated artichokes
  • 1/4 cup green olives, pitted
  • 1 avocado, diced
  • 1 cup shredded carrots
  • 1 cup arugula
  • 1 cup cherry tomatoes, halved
  • 2 radishes, thinly shaved
  • 1 handful of parsley
  • 1 handful of basil
Instructions
  1. Cook pasta according to directions on box.
  2. In a medium bowl, whisk together lemon juice, honey and olive oil. Season with salt and pepper. Divide into 8 oz mason jars.
  3. Next, divide cooked pasta into jars.
  4. Add artichokes, olives, avocado, carrots, arugula, cherry tomatoes, radishes, parsley and basil evenly between each jar. Cover and seal.
  5. When ready to eat, shake jar to coat everything in dressing. Perfect for on the go!
