Honeycomb Pasta

Ingredients
  • 2 bags Explore Cuisine Rigatoni
  • 2 bags vegan mozzarella
  • 1 bag vegan parmesan
  • 3 cloves of garlic
  • 2 cups cashews soaked in water for 2 hours
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 chopped dried chili peppers
  • 2 vegan sausage links or sliced zucchini
  • jar marinara sauce
  • Olive oil
  • fresh chopped basil
  • crushed red pepper
Instructions
  1. Add soaked cashews, garlic, salt, and chopped chilis to a food processor
  2. Add vegan sausage to a pan to brown
  3. Cook Explore Cuisine Rigatoni as per box instructions
  4. Mix the cooked pasta, olive oil, and vegan cheese in a bowl
  5. Add oil and sauce of choice to the bottom of a cake pan and begin to assemble rigatoni standing upright
  6. Pour on cream sauce, marinara, more cheese & sausage
  7. Put in oven at 400˚ for 30 minutes
  8. Release from the cake pan, cut, serve & enjoy!
