Cauliflower-Cheese Pesto Lasagna

Ingredients
    The Pesto
  • 1 cup fresh basil leaves
  • 1/2 cup spinach
  • 2 garlic cloves, peeled
  • 3 tbsp pine nuts
  • 1⁄3 cup nutritional yeast
  • 1⁄3 cup cup extra-virgin olive oil
  • 1⁄4 tsp sea salt
  • Alfredo Sauce
  • 1 tbsp butter-flavored Nutiva Coconut
  • 2 tsp crushed garlic
  • 1 shallot, thinly sliced
  • 1 cup plant-based milk
  • 2 cup vegetable broth
  • 3 cup cauliflower florets
  • 1/4 cup nutritional yeast
  • 1 tbsp lemon juice
  • 1 tbsp extra-virgin olive oil
  • 1/4 tsp dried thyme
  • 1/4 tsp dried oregano
  • 1/4 tsp sea salt
  • 1/4 tbsp black pepper
  • For The Lasagna

  • 1 tbsp nutritional yeast
  • tbsp pine nuts
Instructions
  1. Preheat the oven to 375°F.
  2. For the pesto: Pulse the ingredients in a food processor until well combined. Set aside.
  3. For the Alfredo sauce: Sauté the coconut oil, garlic, and shallot in a medium saucepan over medium heat until fragrant and golden.
  4. Stir in the milk and vegetable broth. Increase the heat and bring the mixture to a medium boil.
  5. Add the cauliflower florets to the saucepan. Lower the heat to medium
  6. cover, and cook for 10 minutes, or until the cauliflower is soft.
  7. Combine the cauliflower mixture and the remaining Alfredo sauce ingredients in a blender and blend on high until creamy and smooth.
  8. To assemble the lasagna: Spread a layer of Alfredo sauce in a square (9 x 9-inch) or rectangular (9 x 13-inch) baking dish. Layer 4 lasagna sheets over the sauce. Spread a layer of pesto sauce over the lasagna, then add another layer of 4 lasagna sheets. Alternate layering the Alfredo sauce, 4 sheets of pasta, pesto, and 4 sheets of pasta until all the sheets are used, reserving enough pesto for the top layer.
  9. Sprinkle the nutritional yeast and pine nuts over the top pesto layer. Note: Depending on the size of the dish, you may be preparing 3 or 4 layers.
  10. Bake the lasagna in the oven for 40 minutes, until the noodles are cooked through.
