  • To a high sided sauté pan over medium heat, add olive oil. Once glistening, add mushrooms, cook until golden and all moisture has released from mushrooms. Turn heat down to medium low. Add onion, chili powder, ground cumin, garlic powder and paprika. Season with salt and pepper. Cook 1 minute, until spices become fragrant.
  • Add tomatoes with green chilies and vegetable broth. Increase heat to high, let reduce until thickened, about 20 minutes. Turn heat off.
  • Bring a large pasta pot filled with water to a boil. Season with salt, cook Explore Cuisine’s Fava Bean Fusilli according to package directions. Drain (reserve 1 cup pasta water) and add pasta directly to chili sauce. Stir until evenly coated. Use pasta water to adjust consistency. Divide between bowls. Top each with cheddar cheese, shaved red onion, jalapeno, Greek yogurt and a lime wedge.
