Pad Thai with Peanut Sauce

  • Pad Thai

  • To prepare Peanut Sauce place Garbanzo Beans , Peanut Butter , Lime Juice , Tarmari , Sriracha , and Vegetable Broth into a blender
  • Cook Pad Thai Noodles according to the instructions on the package and set aside
  • Heat Olive Oil over medium heat in a large wok
  • Add Garlic , Bell Pepper , Onion , Sweet Potato , and Pea Pods (approx. 5 mins.)
  • Meanwhile, add Quinoa to a small skillet
  • Toast until golden (2-3 min.)
  • Once Vegetables are cooked, add cooked Noodles to wok
  • Pour in Peanut Sauce and mix until everything is evenly coated If sauce is too thick, thin out with a little bit of water
  • Serve dish in bowls, topped with Lime Wedge , Chopped Peanuts , Cilantro , and Toasted Quinoa


Cooking Tip: Rinse under cold water after draining to stop the cooking.
