Instructions
- To prepare Peanut Sauce place Garbanzo Beans , Peanut Butter , Lime Juice , Tarmari , Sriracha , and Vegetable Broth into a blender
- Cook Pad Thai Noodles according to the instructions on the package and set aside
- Heat Olive Oil over medium heat in a large wok
- Add Garlic , Bell Pepper , Onion , Sweet Potato , and Pea Pods (approx. 5 mins.)
- Meanwhile, add Quinoa to a small skillet
- Toast until golden (2-3 min.)
- Once Vegetables are cooked, add cooked Noodles to wok
- Pour in Peanut Sauce and mix until everything is evenly coated If sauce is too thick, thin out with a little bit of water
- Serve dish in bowls, topped with Lime Wedge , Chopped Peanuts , Cilantro , and Toasted Quinoa

Cooking Tip: Rinse under cold water after draining to stop the cooking.
