  • Cook spaghetti as instructed on the package
  • Soak the rice sheets in a bowl of water
  • To assemble the rolls, place a sheet of rice paper in a medium bowl of warm water until they have just softened.
  • Place some of the vegetable filling horizontally in the center of the sheet and top with mint and sesame seeds. Fold the edge closest to you up and over the filling; roll sheet to enclose filling, folding in sides after the first complete turn of roll.
  • Whisk peanut butter, soy sauce, vinegar, garlic, and boiling water until smooth. Top with sesame seeds and serve alongside rolls.
