- Bring a large pasta pot filled with water to a boil. Season with salt. Cook pasta according to package instructions, during the last 2 minutes of cook time, add asparagus and peas.
- Strain pasta and run under cold water to cool down. Set aside until ready to use.
- To a large bowl, whisk together lemon juice, agave, and olive oil. Season with salt and pepper. Add celery, scallions, Edamame Spaghetti, asparagus and peas. Add dill, parsley and mint. Toss until all ingredients are evenly coated.
- Check seasoning. Serve at room temperature and chilled. Garnish with additional herbs.
