  • Cook the spaghetti in a pot of salted water according to the instructions on the package, then put them aside and let them cool down.
  • Chop the clove of garlic thinly or use a garlic press, then add all the ingredients for the dressing and combine well.
  • Roast cashews in a pan and put them aside.
  • Chop up the mango, avocados, coriander, and the spring onion and combine with the black bean spaghetti and the dressing.
  • Top with roasted cashews and serve.
