Veggie Packed Pasta Salad

Ingredients:

  • 8oz (227g) Explore Cuisine Red Lentil Elbows
  • 2 celery sticks - sliced thin
  • 1 carrot - shredded
  • Yellow and red bell pepper - sliced thin
  • Vinaigrette dressing
  • Vegan feta crumbled (optional)
  • Salt and pepper

Instructions:

  1. Prepare the sliced vegetables.
  2. Cook pasta according to the box instructions.
  3. Combine the pasts with all sliced vegetables
  4. Toss with enough vinaigrette to coat the pasta well. 
  5. Fold in vegan feta (optional).
  6. Season with salt and pepper and serve.
