Ingredients:
- 8oz (227g) Explore Cuisine Red Lentil Elbows
- 2 celery sticks - sliced thin
- 1 carrot - shredded
- Yellow and red bell pepper - sliced thin
- Vinaigrette dressing
- Vegan feta crumbled (optional)
- Salt and pepper
Instructions:
- Prepare the sliced vegetables.
- Cook pasta according to the box instructions.
- Combine the pasts with all sliced vegetables
- Toss with enough vinaigrette to coat the pasta well.
- Fold in vegan feta (optional).
- Season with salt and pepper and serve.
