  • Bring a large pasta pot filled with water to a boil. Season with salt. Cook Explore Cuisine’s Brown Rice Pad Thai according to package directions. Drain and set aside until ready to use.
  • Heat a large wok or high sided skillet over medium high heat. Add sesame oil, once glistening, add shallots. Cook about 1-2 minutes. Add carrots, garlic and ginger. Cook until fragrant about 30 seconds. Next add bell pepper, green and yellow zucchini, serrano and whites of scallions. Stir and allow to cook down for 3-5 minutes.
  • Meanwhile, in a medium bowl, whisk together oyster sauce, soy sauce, fish sauce, brown sugar and water. Pour directly over vegetables, add noodles and toss to coat. Add ½ of the thai basil, stir until combined. Remove to bowls and garnish with remaining thai basil and scallion greens.
